With six new restaurants popping up in just a couple of years and plans for more, it’s clear that Selda is not merely surviving — it’s thriving.

What’s the secret behind their remarkable growth? According to chef-partner Habip Kargin, it's all about teamwork. The Selda group operates under a partnership model, allowing managers, chefs, and even bartenders to become partners in new ventures. “I don’t want, just, ‘Hey, you’re my employee,’” Kargin shared passionately. This unique approach fosters a sense of ownership among staff, leading to dedication that one wouldn’t typically find in the conventional restaurant hierarchy.

Selda’s roots trace back to Pera, a Turkish restaurant that experienced turbulence several years ago. Chef Kargin learned valuable lessons during that time, particularly the importance of sharing success. “From the first Pera, I had nine or ten employees who left me in one night,” he reminisced, highlighting the challenges of traditional models. But every setback led to new strategies, culminating in the successful formula at Selda.

As new restaurants open, maintaining quality is vital. The Selda group employs a central commissary kitchen to ensure consistency across locations. The Selda team is eyeing additional locations, including a promising new venture in Irving and even a large property built from scratch. As they set their sights on these new opportunities, Kargin and Sherenian express confidence in sustainable growth without compromising the essence of the beloved Turkish kitchen. “Whatever he makes is great,” Sherenian said, referring to Kargin's culinary skills.
